Information on Allergies
Allergens
Any type of food can cause an adverse reaction but the following types of foods account for 90 percent of all reactions: eggs, milk, peanuts, tree nuts, fish, shellfish, sesame and mustard seeds, wheat, and soy. Tree nuts include pecans, pistachios, pine nuts, and walnuts [1]. The majority of food-related symptoms occur within two hours of ingestion and often begin within minutes. In some cases, the reaction may be delayed by four to six hours or even longer [1]. Children may outgrow their allergic reaction to milk and to eggs. Peanut and tree nut allergies are likely to persist. People allergic to a specific food may also potentially have a reaction to related foods. A person allergic to a specific tree nut may be cross-reactive to other tree nuts. As another example, those allergic to shrimp may react to crab and lobster [2].
